A delicious Arabic twist on the classic club sandwich using some of my favorite Arabic ingredients! Ideal for breakfast, lunch or dinner!

INGREDIENTS

  • 3 slices of toast bread

  • Labaneh spread

  • Halloumi cheese slices

  • Jibne baida (Arabic white cheese), soaked in cold water

  • Feta cheese

  • Cucumber slices

  • Tomato slices

  • Palestinian green olives, pitted and halved

  • Za’atar

  • Mint leaves

PREPARATION

1. Take the first 2 slices of bread and spread each half with the labaneh spread.

2. Top with za’atar, cucumber slices, tomato slices and Palestinian olives, then close the sandwich.

3. On the last slice of toast, spread some feta cheese, then add the white cheese (after patting it dry) and halloumi slices. Top with mint leaves, then place the labaneh sandwich over the top of the cheese sandwich, creating a 3 layer sandwich.

4. If you’re going to toast it, then do it now on a frying pan, until the cheese softens and the bread browns.

5. Best served with a side of crisps and Palestinian sage tea!

Notes:
With sandwiches, it's always about preferences. Extra cheese, no cheese, veggies, no veggies, add tomatoes, pickles, olives and so on. Don't hesitate to deviate from the recipe and go with what you prefer!

You can use any type of bread available to you to make it.

We soak the Arabic white cheese for about 30 mins or so, because it is a hard cheese that is super salty. You can prepare the cheese days ahead and store covered in refrigerator.
