MEXICAN RICE

Enjoy this delicious one pot Mexican rice dish that is quick, easy and the perfect accompaniment to your Mexican feast!

INGREDIENTS

  • 1 cup basmati rice, rinsed and drained

  • 1 and 1/2 cup chicken broth

  • 1/2 cup Mexican tomato salsa

  • 1 tablespoon butter

  • 1 teaspoon salt

  • 1/2 teaspoon cumin powder

  • 1/2 teaspoon garlic powder

PREPARATION

1. In a pot, combine all the ingredients together and mix thoroughly.

2. Place pot over medium-high to high heat and bring to a boil, while stirring regularly.

3. Once it starts to boil, place aluminium foil over the pot and cover tightly with lid.

4. Reduce heat to low, and let it simmer for 15-20 minutes. Check around the 15 minute mark to assess whether it’s done or needs more time.

5. Remove from heat and let it to stand for a few minutes, then fluff up with a fork.

6. Serve with a side of sour cream, chopped tomatoes, guacamole and beans!

Notes:
Jasmine rice works well if Basmati is not available. Usually, any long grain rice is a good option. However, if you only have Egyptian or short grain rice, then you can always use that but reduce the broth to 1 and 1/4 cup instead.

You could use any stock flavor to cook it with. Make it vegetarian by using vegetable stock.

You can add more vegetables to it, such as diced onions or freshly chopped tomatoes.
