AVOCADO EGG SALAD

A healthy substitute to the classic egg salad that is easy to whip up and prepare ahead of time! It's the perfect breakfast for those busy mornings, but also works well for an afternoon snack or a quick lunch.

INGREDIENTS

  • Soft tortilla bread, Slice of toast or Arabic pita bread

  • 2 hard boiled eggs, peeled

  • 1 ripe avocado, pitted and peeled

  • Juice of 1 small lime

  • Sea salt, to taste

  • Fresh cracked pepper, to taste

  • Dash of paprika

PREPARATION

1. Using a fork, mash the avocado in a bowl, then add the lime juice, mixing well.

2. Season with fresh sea salt and cracked pepper, to taste. You can also add more lime juice if needed.

3. In a separate bowl, begin to mash the boiled eggs using a fork, but not completely, keeping it somewhat chunky. 

4. Add the avocado to the egg mixture and mix to combine, continuously tasting as you go to see if it is missing anything - especially seasoning!

5. Finally, place the avocado egg salad in the center of the tortilla, topping it with a dash of paprika and rolling it tightly closed. 

6. Alternatively, you could have it in pita bread or on top of some toast or just serve it in a bowl, as a dip.

Notes:
This is the healthy option to the classic egg salad, substituting mayonnaise with avocado.

You could also substitute lime juice with lemon juice if you don’t have any lime on hand.
