TURKISH POACHED EGGS, Çılbır

The Turks are known for their food and delicious breakfast spreads! These Turkish eggs are one of my favorite ways of eating eggs and they are not too complicated. This traditional dish is full of flavor and is best served with some toasted bread. 

INGREDIENTS

  • 2 eggs

  • 2 cups plain yogurt

  • 1 garlic clove, minced

  • A handful of fresh dill, chopped

  • Paprika, to taste

  • Salt and pepper, to taste

  • 1 tablespoon butter, room temperature

PREPARATION

1. In a bowl, mix the 2 cups of yogurt with the minced garlic and dill. Season with salt to taste. Set aside.

2. Poach eggs in boiling water using either the whirlpool effect or the microwave trick to your desired consistency (I like mine runny).

3. Remove with a slotted spoon and very gently dab it with some paper towel.

4. To serve, divide the yogurt evenly between two bowls and place the poached eggs on top.

5. Melt the butter in a skillet over medium heat until it begins to very slightly brown, then add some paprika to it, mixing thoroughly.

6. Generously drizzle the paprika butter mixture over the eggs and yogurt, and sprinkle an extra dash of paprika on top.
