BUTTERMILK PANCAKES

These thick and fluffy pancakes are everyone’s favorite treat on the breakfast table! The secret lies in buttermilk, which gives you those deliciously soft and scrumptious layers of absolute goodness.

INGREDIENTS

  • 2 cups all-purpose flour

  • 3 tablespoons sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 cups buttermilk

  • 2 eggs

  • 1 teaspoon vanilla essence

  • 4 tablespoons butter, melted

PREPARATION

1. In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt until well-combined.

2. In a separate bowl, whisk together buttermilk (to make buttermilk use 1 cup of milk with 1 tablespoon of lemon juice and set aside for 5 minutes) , eggs and vanilla essence.

3. Then add the melted butter and continue stirring, until all the wet ingredients are well-incorporated.

4. Pour the wet ingredients over the dry ingredients and stir until just combined - do not over-mix the batter.

5. Grease a skillet or large pan with cooking spray and place over medium-low heat.

6. Scoop the pancake batter into the pan, as evenly as possible, circling outwards to form a nice round shape. Let it cook for about 2 to 3 minutes, until bubbles begin to pop out on the surface and the edges look set.

7. Flip it on the other side and cook for another 2 minutes, until the pancake is golden brown.

8. Repeat the process until the batter is finished, and make sure you grease your pan with cooking spray repeatedly when it dries out.

9. Serve warm with maple syrup, honey, berries, bananas and anything else you like.

Notes:
A dash of cinnamon and/or nutmeg add a delicious breadth of flavor to your pancakes.

Make sure you don’t over-mix the batter to get thick, light and fluffy pancakes.

Amount of flour may vary, depending on different factors. For best results, spoon the flour into your measuring cup and level off, or use weight for more accurate results. 

You could serve your pancakes with chocolate, syrup, honey, fruits, cream, jam and much more.

Adding blueberries or chocolate chips to your pancake batter when cooking is also a delicious option.
