BLUEBERRY FRENCH TOAST ROLL-UPS

 

You'll want to start your day off right with this fun take on French toast. These roll ups are filled with juicy blueberries that will burst in your mouth with every bite!

INGREDIENTS

  • Slices of white toast bread

  • 3 eggs

  • 1/4 cup milk

  • 1/4 teaspoon vanilla essence

  • Pinch of ground nutmeg

  • 1/3 cup sugar

  • 2 teaspoons cinnamon powder

  • Blueberry jam

  • Fresh blueberries

PREPARATION

1. Cut off the crusts from each slice of toast bread, and flatten them out using a rolling pin.

2. In a shallow baking dish, whisk eggs, milk, vanilla essence and nutmeg until well-combined.

3. In another shallow baking dish, mix the sugar and cinnamon and put aside.

4. Taking each slice of toast, spread blueberry jam on one side of the bread, top it with a few pieces of blueberries and roll it up tightly.

5. Heat a pan over medium-high heat and melt a tablespoon of butter.

6. Dip roll into the egg mixture, making sure to coat it really well and place it seam-side down onto the pan.

7. Make sure you turn the roll so it cooks evenly from all sides. Upon taking it out of the pan, immediately dip it into the sugar and cinnamon mixture, covering it completely.

8. Repeat the process with remaining slices of bread until the egg mixture is done.

9. Cook them 2 or 3 at a time, and make sure you rinse the pan and add a new tablespoon of butter after every batch of rolls are done.

Notes:
You can fill these rolls with anything you like - peanut butter, jam or cream cheese.

You can opt to leave out the berries and put them on the side instead. You can also serve them with maple syrup or cream or top them with some powdered sugar.
