CHOCOLATE CHIP COOKIES

Is there anything more delicious than a batch of soft and chewy chocolate chip cookies? They are the perfect make-ahead dessert! You can prepare the cookie dough balls days in advance and freeze them in an airtight container until that craving hits.

INGREDIENTS

  • 2 1/4 cups all-purpose flour

  • 1 cup brown sugar

  • 1/2 cup white sugar

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 cup butter, softened to room temperature

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 2 cups semi-sweet chocolate chips

PREPARATION

1. Preheat oven to 175C, and prepare baking sheets with parchment paper.

2. In a large mixing bowl, beat butter for about a minute until smooth.

3. Add both sugars to the butter and beat until the mixture turns smooth and is light in color.

4. Then add the eggs and vanilla extract and continue beating until well-combined.

5. In another bowl, combine flour, baking soda and salt, mixing well to make sure ingredients are well incorporated.

6. Add the dry ingredients to the liquid mixture and mix just until combined. Then fold in the chocolate chips.

7. Scoop the cookie dough evenly, forming them into balls, then refrigerate for about an hour.

8. After an hour has passed, you can opt to freeze them in an airtight container or to bake them immediately. If you choose to freeze them, take them out in advance to allow the cookie dough to thaw slightly before baking.

9. Bake the cookies for about 10 minutes. They should look soft in the middle (almost as if they are undercooked) but firm around the edges.

10. Once they’re out of the oven, leave them to cool for about 15 minutes before storing them in an airtight container.
