MINI FROZEN KEY LIME PIES

These individual Key Lime pies are so easy to make and are the perfect treats, both refreshing and satisfying on a hot summer day! The luxurious creamy texture has the perfect balance of tangy and sweet flavors and tastes just like ice cream! Recipe from This Silly Girl’s Kitchen.

INGREDIENTS

  • 3/4 cup lime juice, freshly squeezed (about 6 large limes)

  • 1 can sweetened condensed milk

  • 250g whipped cream

  • 200g cream cheese, softened

  • 1/2 stick butter (about 100g), unsalted and melted

  • 1 sleeve digestive biscuits

  • Silicone cupcake liners

PREPARATION

1. Crush biscuits into crumbs and mix with butter until it forms a sticky, sandy texture, then set aside. Add more butter if you find you haven’t reached the desired texture.

2. With a handheld mixer, beat cream cheese in a bowl until smooth, then fold in condensed milk and mix. Add lime juice and continue mixing until smooth.

3. For the whipped cream, I use the ready made whipped cream dispensers and add an entire bottle (which is about 250g) to the cream cheese mixture, folding it all really well until combined.

4. I took the idea of using the silicone cupcake liners for an upside down method from This Silly Girl’s Kitchen, because I thought it was a great way to serve these and also makes for brilliant presentation! So, taking the silicone cupcake liners, fill each one with the cream cheese mixture about halfway up then top with the biscuit crumbs smoothing them gently with the back of a spoon.

5. Place on a baking sheet and store in freezer until set, I usually leave them overnight.

6. To peel back the liners and release pies, very carefully and slowly fold back the silicone sleeves and place it biscuit side down. Since the pie will be quite solid, it will be easy to maneuver, but do not take too much time as they start to melt fast.

7. Garnish with whipped cream and a slice of lime on top before serving.
