YOGURT MARINATED CHICKEN

 

The marinade creates a tangy dish full of flavor, while the yogurt produces chicken that is beautifully juicy and moist.

INGREDIENTS

  • 1 cup yogurt

  • 4 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1/2 tablespoon dried oregano

  • 1/2 tablespoon dried thyme

  • 1/2 teaspoon salt

  • Dash of pepper

  • 1 tablespoon of lemon juice

  • A handful of roughly chopped parsley

  • 500 grams chicken (thighs and breasts)

PREPARATION

1. First, make the marinade by mixing together the yogurt, garlic, olive oil, dried herbs, and salt and pepper in a bowl, then add the lemon juice and stir well to combine all the ingredients. Always make sure you taste along the way to see if it needs more salt or lemon and adjust accordingly. Once you are satisfied with the taste, add the parsley to the marinade and stir. 

2. Dip the chicken pieces into the marinade, making sure to thoroughly rub the mixture onto the chicken and wrap them in plastic or ziplock bags and refrigerate for about 30 minutes allowing them to really absorb all the flavors.

3. When 30 minutes have passed, preheat oven to 200°C

4. Take out the chicken pieces, place them in a baking dish and stick them in the oven for about one hour.

Notes:
Keep checking the doneness of the chicken from around 40 minutes onwards. This dish is best served with a side of roasted potatoes.
