BAKED EGG MUFFIN OMELETTE

You'll want to start your day right with these delicious egg muffins! They are easy to make, they taste great and they are a much healthier version to the classic eggs. Not to mention, they can be made in advance!

INGREDIENTS

  • 3 eggs

  • 1/4 cup fresh milk

  • 1 onion, diced

  • 1 tomato, seeded and diced

  • Bunch of parsley, finely chopped

  • Shredded cheese (any cheese you prefer or a mix of cheeses)

  • Salt and pepper

PREPARATION

1. Preheat oven to 175°C and grease your muffin tins really well with cooking spray or butter.

2. In a large bowl, using a fork, whisk eggs and milk adding a dash of salt and pepper.

3. Evenly divide the chopped onions, tomatoes and parsley amongst the muffin tins, then pour the egg mixture equally over them. 

4. Finish it off by sprinkling the shredded cheese on top of each cup.

5. Place them in the oven and bake for 25 minutes until the egg is cooked through. Once they are ready, use a knife and slide it around each one to pop them out of the muffin tins.

6. Serve immediately.

Notes:
You can prepare the egg muffin omelettes in advance and store them in the refrigerator or freezer in ziplock bags.
Take them out and heat for about a minute in the microwave before serving.
