FOUL FATTEH

Foul (fava beans) fatteh was my own special contribution to the fatteh family. I strongly believe that there is nothing that cannot be made into a delicious fatteh dish. They are easy to prepare and take no time to throw together!

INGREDIENTS

For the foul (fava beans):

  • 2 cans fava beans, ready to eat

  • 1/4 cup of the fava beans sauce

  • 1 tomato, finely diced

  • 2 tablespoons white onions, finely diced

  • Juice of half a lemon

  • 1 teaspoon cumin

  • 1 garlic clove, minced

  • Salt and pepper, to taste

For the yogurt mix:

  • 1 cup yogurt

  • Juice of half a lemon

  • 2 tablespoons tahini paste

  • 1 garlic clove, minced

  • Salt, to taste

For base and toppings:

  • Chopped Arabic bread, toasted

  • Toasted nuts (almonds, pine nuts), in ghee or olive oil

  • Parsley and sumac, to top

PREPARATION

1. In the base of your serving dish, place a generous layer of the toasted bread.

2. Meanwhile, in a small saucepan, heat fava beans over low heat, then drain, but reserve the juices of the fava beans and set aside.

3. Add the cumin, garlic, lemon juice, then mix well to combine.

4. Add the diced tomatoes and onions, then season with salt and pepper and mix to combine well.

5. Use the fava beans sauce that has been reserved to soak the toasted bread in the serving dish.

6. In a separate bowl, combine all the ingredients for the yogurt mix and whisk well until smooth. Taste to ensure seasoning is good.

7. Get the fave beans mixture you prepared, and add a few tablespoons of the yogurt mix over it and mix to combine, then pour the fava beans mixture over the bread base in your serving dish.

8. Add the rest of the yogurt mix over it, then top with the toasted nuts, parsley and sumac.
