MANAEESH (CHEESE & ZA'ATAR)

Manaeesh is the ultimate Arabic breakfast that comes in different shapes and sizes with all sorts of topping variations! It’s super easy to make and you can even prepare the dough a day in advance to use the next day!

INGREDIENTS

  • 3-4 cups bread flour (or all-purpose)

  • 2 teaspoons yeast

  • 1 teaspoon sugar

  • 1 teaspoon salt

  • 3 tablespoons yogurt or milk powder

  • 1/4 cup vegetable oil or olive oil

  • 1 cup warm water

PREPARATION

1. Add all ingredients, except for the water, in the bowl of a stand mixer, with the dough hook attached, and start mixing on low.

2. While mixing, start adding the water slowly until it forms a dough. If the dough is too dry, add a little more water. If the dough is too wet, add a little more flour.

3. Let it mix on medium speed for 5 minutes, then shape it into a ball. Place it in a slightly oiled bowl and cover to let it rise for an hour. In the meantime, preheat oven to 240C.

4. Form dough into balls, and roll them out thinly in a circle to form the manaeesh base.

5. For the topping, you can use anything you like. Za’atar, mix of cheeses, minced meat, or a mix of different things!

6. Bake in oven for about 10 minutes, or until the edges start to brown. Keep checking on them as they are baking!
