HUMMUS FATTEH

Hummus fatteh can be prepared in many different ways, every family has its own special touch to it. Personally, I like to combine elements of the fatteh with another similar dish called “tesiyeh”, to create phenomenal flavor!

INGREDIENTS

For the hummus:

  • 1 can chickpeas, ready to eat

  • 1/4 cup of the chickpeas water

  • 1/4 cup lemon juice

  • 1/4 cup tahini paste

  • 1 teaspoon cumin

  • 1 garlic clove, minced

  • Salt, to taste

  • 2 ice cubes

For the yogurt mix:

  • 1 cup yogurt

  • Salt, to taste

  • 1/4 cup lemon juice

  • 2 cloves garlic, minced

For base and toppings:

  • Chopped Arabic bread, toasted

  • Toasted nuts (almonds, pine nuts), in ghee or olive oil

  • Parsley and sumac

PREPARATION

1. In the base of your serving dish, place a generous layer of the toasted bread.

2. Meanwhile, in a small saucepan, place the chickpeas with its water, and add an additional cup of water and let it come to boil for about 10 minutes.

3. After its boiled, in a bowl of a stand mixer, use one cup of the chickpeas to prepare hummus and add 1/4 cup of the chickpeas water, lemon juice, tahini paste, cumin, garlic, salt and ice cubes. Mix until you form hummus, a smooth paste.

4. Use whatever is left of the chickpeas water to very lightly soak the toasted bread in the serving dish. Then add over the bread the rest of the chickpeas that were not used to make hummus.

5. In a separate bowl, combine all the ingredients for the yogurt mix and whisk well until smooth. Taste to ensure seasoning is good.

6. Get the hummus you prepared, and add 1/4 cup of the yogurt mix over it and mix to combine, then pour it over the bread and chickpeas layer in your serving dish.

7. Add the rest of the yogurt mix left over it, then decorate with the toasted nuts, parsley and sumac.
